Zucchini Pizza Casserole Recipe

Cutting down on the carbs for New Years? This recipe has all the goodness of a cheesy pizza without the added carbs and calories from the crust.

Circle B Ranch

Zucchini Pizza Casserole

Yields 8

Prep Time: 20 min
Cook Time: 40 min
Total Time: 1 hr

I made this recipe and I can say it was delicious. I think it came out more like a casserole than a pizza. Enjoy!

4 cups shredded unpeeled zucchini
1/2 tsp. salt
1/2 tsp. garlic powder
2 large eggs
1/2cup grated Parmesan cheese
4 oz. sliced mozzarella
1 lb. Circle B Ranch Sweet Italian Sausage
1/2 onion, chopped
6 basil leaves, chiffonade
15 oz. Marina’s Italian Style Tomato Sauce

1. Preheat oven to 400°. Grate zucchini, place in a colander, and squeeze out the moisture.
2. Combine with zucchini with eggs, Parmesan, half of mozzarella, and garlic powder. Press into a greased 13x9-inch or 3-quart baking dish. Bake 20 minutes.
3. Meanwhile, in a large saucepan, cook sausage and onion over medium heat, crumbling sausage until meat is no longer pink; drain. Add tomato sauce and basil; spoon over zucchini mixture.
4. Sprinkle with the remaining cheeses. Bake until heated through, about 20 minutes longer.
5. Enjoy!

To freeze for later: Cool baked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap casserole; reheat on a lower oven rack until heated through and a thermometer inserted in center reads 165°.
